A sterilized food product containing starch, the starch having: (a) an amylose content of at least 60 wt. %; (b) a median particle size of between 1 and 15 &#x3bc;m, at least 90 wt. % of the starch particles having a particle diameter of less than 50 &#x3bc;m; and (c) a non-digestible starch content of less than 50 wt. %. The product is obtained by heating and rapidly cooling the starch product and has a high slowly digestible starch content. It is suitable for use in the treatment of diabetes, obesity, insulin resistance, or for postprandial glucose response.

Process for producing slowly digestible starch

The invention relates to a combination of heat-treated nutritional composition having a carbohydrate fraction comprising a) 5-30 wt % of one or more monosaccharides selected from galactose, ribose and mannose; b) carbohydrates capable of providing b1) sustained release glucose and b2) rapidly available glucose; c) optionally fructose; d) glucose-containing disaccharides other than maltose and sucrose; and e) optionally sugar polyols. The invention also pertains to the use of such a heat-treated nutritional composition for controlling glucose levels in blood and/or tissue, especially for preventing and/or treating diabetics, insulin-resistance, obesity, postprandial glucose response, metabolic syndrome, syndrome X, hyperglycemia, hypertriglyceridemia, hyperinsulinemia, dyslipidemia, dysfibrinolysis and/or disorders associated with major surgery or trauma.

Indigestible oligosaccharides having a molecular weight of 450 Da to 3700 Da are used for the improvement of insulin resistance, the prevention of post-prandial glycaemic dip, and/or the decrease of the post-prandial glucose response of a meal, which is consumed within 72 hours after the consumption of the first product. The oligo-saccharides are especially galacto-oligosaccharides, and are advantageously administered a few hours prior to having the meal.
