A commercial dishwasher () has a spray chamber () for holding items () to be washed and is designed for loading and unloading batches of items () to be washed into and from a region () for items to be washed. The dishwasher () has a fan () for producing an air stream () which passes from an air inlet () below the region () for items to be washed, through the spray chamber (), to an air outlet (), with the air stream () in the spray chamber () being passed through the region () for items to be washed in order to dry the items () which have been washed. A deflector arrangement () acts on the air stream () entering the spray chamber () through the air inlet () in order for the air stream () to enter the region () for items to be washed in a uniformly distributed manner from below.

Industrial dishwasher and method of operating the same, wherein, during at least one operating state other than the drying phase, program control automatically provides for second ambient air to be blown by means of the additional blower directly into the drying channel and through the latter and out through the blowing-out opening, the dishwasher being switched on but the main blower being switched off.
