In a method and device, an elongate bone is removed from a meat-comprising extremity or part thereof of a slaughter animal. The bone has a first joint end, which forms part of a first joint, and a second joint end, which forms part of a second joint. The bone is taken out of the extremity at the first joint end, a tissue connection between the extremity and the second joint end of the bone substantially being retained. Then, meat is moved away from the bone in the region of the second joint end of the bone as a result of at least a part of the bone being moved in its longitudinal direction with respect to a scraper device towards and in particular beyond the second joint end, and the tissue connection between the extremity and the bone is mechanically broken.

In a method and device for processing a poultry leg which is hanging from a carrier and comprises at least a drumstick, the operations are carried out: cutting into the drumstick substantially around the drumstick in the vicinity of the tarsal joint by means of at least one incision; and at least partially separating a part of the leg which comprises the at least one incision. The carrier is moved onwards during the cutting.

Method and device for processing a poultry leg

Method for obtaining an inner fillet and device for mechanically detaching the undesired tendon part from an inner fillet. The poultry carcass is mounted on a fixing member and positioned so that the tendons are exposed. A processing device, comprising rotating cutters, either partially or completely detaches the tendon from the inner fillets. The cutters make a uniform incision at the moment when the inner fillet and the associated tendon are still essentially in their natural position. The fillets may then be removed manually or mechanically from the carcass.

A method and device for performing an accurate cutting operation near the knee joint of a leg of a slaughtered animal, in particular a bird, the device comprising mechanical means, such as conveying elements and guides, for handling the leg, and cutting means, such as rotary or stationary knives for performing the cutting operation, e.g. for making an incision prior to scraping off meat of a bone or for cutting through the leg. With the device, the desired cutting accuracy is obtained by using mechanical positioning means which operate on the kneecap of the leg, which is preferably bended in the knee joint in its natural bending direction by bending means. The positioning means may comprise one or more supporting elements with a stop edge, which can be moved along the thigh of the leg to against the kneecap.
