A gas oven appliance includes a cooking chamber, a gas burner positioned in the cooking chamber, an igniter positioned at the gas burner, and a gas valve coupled to the igniter. The gas valve includes a bimetallic strip. A controller is configured to operate the igniter. The controller cycles the ignitor between on and off at an interval of time to at least keep the bimetallic strip above a temperature threshold.

A cooking accessory receivable within a cooking chamber of an oven appliance includes a base plate to receive a food item thereon, and an enclosing lid disposed over the base plate. The enclosing lid defines a main inlet and an access opening, the main inlet being defined along the vertical direction and the access opening being defined along the transverse direction. The base plate and the enclosing lid form a high heat chamber for the food item, the high heat chamber being in fluid communication with the cooking chamber.

The controller may be configured to initiate a cooking operation that includes initiating preheat activation of the top heating element, receiving temperature signals from the temperature sensor during the preheat activation, determining a preheat threshold is met based on the received temperature signals, and initiating cooking activation of the top heating element based on a cooking cycle having a predetermined time interval subsequent to determining the preheat threshold is met. Initiating cooking activation may include directing the top heating element based on the cooking cycle for the predetermined time interval.

A method of operating an oven appliance includes obtaining a temperature set point, determining, based on the temperature set point, an electric heating temperature range and a gas undershoot temperature limit, the gas undershoot limit being below the electric heating temperature range, determining that a chamber temperature of the oven appliance has dropped to the gas undershoot temperature limit, and operating a gas heat source to maintain the chamber temperature above the gas undershoot temperature limit.

The oven appliance includes a cabinet extending between a first side portion and a second side portion along the lateral direction.
