In a method for obtaining aqueous gels based on galactomannan and xanthan, the xanthan employed has first been subjected to a treatment resulting in partial or total deacetylation before being introduced in the mixture in which the ratio of deacetylated xanthan to galactomannan is within the range of 15/85 to 90/10. Potential applications include the food industry, explosives or air-treatment products.

Gelling compositions having a base of galactomannans and xanthan

Application, for the enhanced oil recovery by means of an aqueous solution, of an agent capable of increasing the viscosity of the solution. Said agent consists of a mixture of a xanthan salt of a trivalent metal, iron or aluminum, with a complexant for the ion of the trivalent metal.

A gelling composition used as a food gelling agent, in water or milk, and comprising a gelling mixture consisting of a first gelling agent which is a galactomannan and a second gelling agent which is an agar and/or a xanthane, wherein the galactomannan has undergone a depolymerization treatment so that its solution in water at 1% has a viscosity in the range of 10 and 1000 centipoises at 25.degree. C.
