A convection oven comprises a heating compartment, a burner for effecting combustion of gas, a heat exchanger for conducting therethrough the products of combustion of gas initiated at the burner, first and second blowers for blowing air past the heat exchanger and into the heating compartment for heating the compartment, upper and lower blowers each having an inlet through which air is drawn into the blowers from a common side of the heating compartment for recirculation past the heat exchanger, and the heat exchanger having first and second outlets for the combustion products respectively disposed in front of the inlets of the upper and lower blowers. Each outlet is located to direct the combustion products towards a lower region of the inlet of the respective blower. The heating compartment has vertical walls extending generally perpendicular to the one side of the heating compartment, and respective baffles are spaced inwardly from the vertical walls and define therewith air plenum chambers into which is directed air from the heat exchanger. The baffles have therein a plurality of openings for passage of air from the plenums into an interior space located between the baffles, and the plenum chambers are substantially closed at their ends furthest from the heat exchanger to restrict flow of air around the baffles at the ends further from the heat exchanger.

A display frame system comprises hexagonal or octagonal posts and strut assemblies which connect the posts to each other. The posts may be positioned in any of a variety of arrangements depending upon the available space and type of display to be erected. Once the posts have been connected to each other, panels carrying advertising material may be slipped into slots in the posts. The posts are arranged so that each post has a slot which faces a corresponding slot on an adjacent post. Opposite edges of the advertising material are received in the slots in each posts. The display frame system also includes a variety of illumination panels. These are panels which are also mounted between opposing slots in the posts and which carry light fixtures which can either illuminate advertising material from behind or from above, depending upon the configuration of the illumination panel and the arrangement of the posts. The strut assemblies which connect the posts to each other are fastened to the tops and the bottoms of the posts. The strut assemblies include struts which are hidden from view behind the front face of the panel carrying advertising materials. To this end the offset struts include a central portion which is straight and generally parallel to the plane of the panel and two angled end portions which extends to the center of the post. Where the posts are octagonal, the angled end portions are at a 45.degree. angle to the central portion of the offset strut.

Display frame system

A gas-fired convection oven for processing food, for example, having a fan for moving air along a circulatory path over, along and about the food to be processed. A package type gas burner outside the oven is directed into a heat exchanger tube of substantial length extending into the oven. High-temperature exhaust gases are discharged from the burner to be directed through the heat exchanger into the circulatory path of air flowing through the convection oven. Relatively proximate the burner the heat exchanger has a linear portion that is of egg-shaped or elliptical cross section, and that portion is oriented with respect to the outlet of the convection blower and walls of the convection blower chamber to draw air over substantially the entire surface area of such portion for maximum cooling/heat exchange function with respect thereto. The outlet from the flow outlet of the heat exchanger is aerodynamic and is positioned proximate the intake to the convection blower wheel whereby the latter tends to draw the hot gases/products of combustion through the heat exchanger tube.

Insulated cabinets with interchangeable heat transfer units disposed on the top thereof are disclosed and means for improving the air circulation both in the heat transfer units and within the enclosed cabinet. The heat transfer units may be refrigeration type units, freezer type units, heating type units, warming type units or proofing units. Each of the heat transfer units includes a rectangular opening in the bottom thereof to which is attached a duct through which heated or cooled air is forced. The duct has parallel front and rear walls and inclined side walls which taper to reduce the cross section of the air flow. The duct is a sliding fit inside a tunnel which extends vertically along the back wall of the cabinet. The tunnel is provided with two columns of louvers along its entire length through which the air from the duct flows. Air exiting the louvers is deflected by a baffle plate which extends the full width of the rear of the cabinet. The edge portions of the baffle plate are perforated. The air thus must move out forward through the louvers then laterally across the solid portion of the baffle plate before turning forward again through the perforations in the baffle plate into the interior of the cabinet. The improved air flow greatly reduces temperature differences within the cabinet when used as an oven, and the air flow over the heating elements is more uniform, reducing hot spots and thus prolonging their life.

Material on trays or in pans can be stored or transported on a rack which is open at the front and which has horizontal ledges on its sides on which the trays or pans are supported. Construction of the rack can be made easier and more economical by providing slots on the vertical posts of the rack into which horizontal support members comprising the ledges are inserted. Only the uppermost and lowermost support members need be secured in the slots to provide a solid rack frame. Alternative designs of the rack include a multiple unit rack, dual ledges to restrain the tray from tipping when it is less than halfway in the rack, enclosure of the rack to form a cabinet, removable side panels on the rack, and a rack for storing trays vertically.
