The present invention provides a deep fat fryer providing an oil vat for holding hot oil. The hot oil of the vat is heated by a heat exchanger system that includes a pair of heat tubes. Heat transfer along a length of the heat tubes is facilitated by a heat conductive baffle substantially filling the interior of the heat tubes in volume and length. Heated air and gas are forced through the dense and elongated baffle to facilitate heat transfer to the walls of the heat tubes.

The present invention provides a deep fat fryer separating the flue from the splash back panel and with a flue opening directed not upwardly, but rearwardly from the flue. By arranging the flue opening on the rear wall, the opening is protected from grease fallback (e.g., dripping from an overhead exhaust hood) or other foreign objects falling into the opening. The splash back panel further provides a seamless curved design that is easy to clean and also insulated from the heat of the flue. A baffle installed within the flue allows the combustion products to mix, cool, and slow upon exiting the baffle opening and entering the atmosphere reducing the exit temperature and also reducing the heating of the splash back panel.

A self-cleaning burner system incorporates an automatic clean cycle when the burner is started up. Cycles may be programmed for once-a-day cleaning cycle or for other desired interval. On start-up, the cycle routes a small amount of fuel to the burner for ignition inside the burner to clean the burner surfaces. The system incorporates an igniter for fast, routine, and safe ignition of the fuel. Thus, small amounts of debris that accumulate on a surface burner are automatically ignited when the burner is started, keeping the burner clean and operating at a high state of efficiency at all times. The self-cleaning burner system may be incorporated into a fryer or other heating appliance for reliable, efficient operation.

A gas fired deep fat fryer is described wherein in a first embodiment a single fry pot is used and in a second embodiment a split fry pot or a pair of matching fry pots are provided. In the first embodiment two immersion tubes are spaced apart and extend from the front toward the rear of the fry pot with a third pass immersion tube extending from the front through the rear into a flue. Combustion products travel the length of a burner tube through an immersion tube and return through a jet impingement baffle and then make a third pass from front to rear and into the flue. In the embodiment having split fry pot, a single burner and immersion tube therefor is provided with a separate third pass baffle tube. As in the first embodiment the products of combustion travel from the front toward the rear through an immersion tube and then pass downwardly and return the length of the tube from the rear to the front whereupon they encounter a header and pass into a third pass baffle tube extending the length of the fry pot from the front to the rear and into the flue, for exhaustion.

A modular kiosk for use in the food service industry is described. The kiosk includes one or more structural units having upstanding sides and back, and a horizontal roof with couplings on the back thereof for coupling appliances disposed in the unit to sources of energy. The unit typically would have metal, upper and lower sections, each receiving a different appliance for cooking or storing food. The unit can include a hood disposed at eye level and a griddle or deep fat fryer disposed below the hood in the middle section. When a hood is included, the hood is intended to be coupled to a flue. The device is intended to be used in malls and open areas for cooking and dispensing food.

A deep fat fryer is described which is heated by burner tubes extending through the central portion thereof and by burners therein which are metal mesh. The burners support combustion only on the surface so that the primary heat source is infra-red energy to the burner tubes. Exhaust gases from the burner tubes are circulated around sides and upper portion of the fryer only so that the central and upper portions of the tank are heated and the lower portion serves as a sump.
