Process and apparatus for continuously making an endless wafer laminate which has a uniform width and consists of individual wafer sheet layers and intervening cream layers. In order to increase the production rate of such wafer laminate while maintaining a high quality, the invention teaches that each edge of the wafer sheets for the lowermost wafer sheet layer is registered and the deposition of the wafer sheets for the remaining wafer sheet layers is controlled by the succession of said wafer sheet edges. The butt joints of the wafer sheets in the individual wafer sheet layers are offset relative to each other in the direction of conveyance or are arranged exactly in register. For registering the wafer sheet edges, the edges of consecutive wafer sheets are displaced or pivotally moved relative to each other or pulled apart to form a gap. Each wafer sheet for the additional wafer sheet layers is moved to a waiting position in the wafer sheet applicator, which succeeds the coating head for applying a cream layer, and in dependence on the succession of the wafer sheet edges of the lowermost wafer sheet layer is applied to the adjacent cream layer and is then forced against the same. The resulting wafer laminate is used as an intermediate product for making small wafer slices.

The apparatus comprises one or more cutting members arranged along a plane of transport for the wafer blocks. The transporting of the wafer blocks is accomplished by one or more endless revolving members carrying a plurality of pressure components. The endless revolving transport members may be mounted either above or below the plane of transport and extend into the plane of transport during movement of the wafer blocks toward and away from the cutting member or members.

A baking plate is provided, which is adapted to cooperate with a second baking plate to define a cavity for receiving dough to be baked. The baking plate has on one side a generally flat dough-treating surface and on the opposite side a rear surface. The rear surface of the baking plate is formed with at least one channel by which the flexural stiffness of the baking plate is reduced. At least one adjustable stressing device is connected to said rear surface of said baking plate on opposite sides of said channel and operable to subject said baking plate to an adjustable initial bending stress in such a manner that said channel is contracted to an adjustable extent transversely to the longitudinal direction of said channel and that an adjustable convex camber is imparted to said dough-treating surface.

Baking plate

An installation for coating baked products, such as wafer sheets, with a viscous, edible spreading mass, such as caramel, includes a transport installation for moving the wafers and a revolvable, generally cylindrical coating roll above the transport installation. An application reservior cooperates with the coating roll to spread a layer of the spreading mass on the surface of the coating roll. A coating roll squeegee controls the thickness of the spreading mass on the coating roll, and a coating roll blade removes the spreading mass from the coating roll in the form of a layer. This layer of spreading mass is then deposited on the wafers transported by the transport installation. The viscous material of the spreading mass will be continuous and will tend to join the separate wafer sheets together when the layer is deposited on the wafer sheets. In this regard, a separating device is disposed downstream of the coating roll. The separating device includes at least one separating blade with a cutting edge to separate the wafer sheets joined in this manner.

Cream-coated wafer sheets are conveyed by a feeder conveyor in a first plane to a stacking device. The coated wafers are raised in the stacking device into a second plane and by such a raising are attached to the lower sides of a wafer sheet already in the second plane to form a wafer block which is in a raised position with respect to the feeder conveyor. An uncoated covering wafer sheet is separately supplied to each wafer block such that the covering sheet is delivered directly into the second plane at the stacking point, and a coated sheet is attached to the lower side of this covering sheet by raising up into a position in which its cream coating contacts the lower side of the covering sheet. This separate, direct supply of the uncoated covering wafer sheet is effected by a covering sheet conveyor disposed above the feeder conveyor. The terminal end region of the covering sheet conveyor ends in the second plane at the upstream side of the stacking device.

Apparatus for making multi-layer cream-filled wafer blocks

A wafer baking oven for making baked wafers from batter includes an elongated baking chamber with heating elements therein. A thermally insulated enclosure surrounds at least part of the baking chamber. The oven includes a front port adjoining the baking chamber. There are a plurality of baking tongs in the baking chamber, which baking tongs move through the baking chamber and into and out of the front port in a running direction. The baking prongs are openable when in the front port for the removal of baked wafers from the tongs and for charging the baking tongs with batter. The baking tongs are then closed and are moved through the baking chamber in the closed state. The front port includes a charging station for charging the baking tongs with batter and a discharge station for discharging baked wafers along a path. The insulated enclosure includes a pair of lateral walls defining the lateral sides of the baking chamber, a sealing wall defining the top side of the baking chamber and a rear wall defining the rear side of the baking chamber. The baking chamber has a baking chamber exhaust for exhausting gases from the baking chamber. The insulated enclosure substantially completely encloses at least the baking chamber on its two lateral sides, on its ceiling walls, and at its rear wall, with the exception of the baking chamber exhaust. The baking chamber is also substantially completely enclosed at its bottom side.

Wafer baking oven

A wafer baking oven has a set of baking tongs which move through the oven to effect baking of the wafers. The oven is particularly for wafer products such as flat wafers, low hollow wafers, sugar cones, wafer cups and wafer figures. There is a baking chamber through which the baking tongs move and a front end at which baked wafers are discharged from the baking tongs and fresh batter is poured into the tongs for baking. The region in which this takes place is referred to as a front port. The front port includes a batter pouring station and a discharge station with a chute and at least one discharge spider. To reduce loss of heat and to reduce the noise level of the wafer oven, the front port is surrounded by a housing which comprises, at least in part, an enclosure attached to a frame. The housing has two passage openings at the side which face the baking chamber, and the baking tongs pass through these passage openings as they move in a circuit between the baking oven and the front port. There is also an outlet opening in the enclosed housing of the front port for the discharge of baked wafers.

Cream-coated wafer sheets are conveyed by a feeder conveyor in a first plane to a stacking device. The coated wafers are raised in the stacking device into a second plane and by such a raising are attached to the lower sides of a wafer sheet already in the second plane to form a wafer block which is in a raised position with respect to the feeder conveyor. An uncoated covering wafer sheet is separately supplied to each wafer block such that the covering sheet is delivered directly into the second plane at the stacking point, and a coated sheet is attached to the lower side of this covering sheet by rising up into a position in which its cream coating contacts the lower side of the covering sheet. This separate, direct supply of the uncoated covering wafer sheet is effected by a covering sheet conveyor disposed above the feeder conveyor. The terminal end region of the covering sheet conveyor ends in the second plane at the upstream side of the stacking device.

Process for making multi-layer cream-filled wafer blocks

A steam sealing strip for closing open edges between opposed upper and lower cooperating wafer baking plates includes an upper sealing strip portion for coupling with the upper baking plate and a lower sealing strip portion for coupling with the lower baking plate. The baking plates define therebetween a primary wafer baking space for the baking of dough. The upper and lower sealing strip portions provide secondary baking surfaces disposed in opposed, spaced, face-to-face relationship. These secondary baking surfaces define a secondary baking space for baking excess dough which flows from between the baking plates during the baking of wafers. By baking this excess dough, the formation of unbaked dough portions or unbaked dough balls is prevented. The sealing strip includes a plurality of steam channels for releasing steam from between the baking plates. These steam channels open into the secondary baking space.

A process and apparatus for manufacturing waffle blocks filled with cream in which individual waffle sheets are moved on a feeder belt into contact with a coating device for coating on one side and are introduced subsequently into a stacking device where they are individually lifted by at least two oppositely mounted upright spiral feeders that grip the waffle sheets and guide them upwardly in succession against each other until a waffle block composed of a predetermined number of waffle sheets is completed. The completed waffle blocks are pushed by the spiral tracks on a run-off belt and discharged.

Apparatus for manufacturing waffle blocks

An apparatus for cutting blocks of wafers comprises one or more cutting members arranged along a plane of transport for the wafer blocks. The transporting of the wafer blocks is accomplished by one or more endless revolving members carrying a plurality of pressure components. The endless revolving transport members may be mounted either above or below the plane of transport and extend into the plane of transport during movement of the wafer blocks toward and away from the cutting member or members.

A baking press or baking tongs having a pair of baking plates which are clamped together with dough treating sides facing each other. The baking tongs produce sheets of wafers from a filling of dough disposed between the dough treating sides when the baking plates are in a heated condition. One or more of the dough treating sides are convexly cambered into a space between the dough treating sides of the pair of clamped baking plates.

A wafer sheet cooler has a frame in the form of an archway in which two driven conveyor chains are guided parallel to the frame. The frame is preferably adapted to be assembled in accordance with a unit construction system. The archway frame has two upwardly converging vertical parts which enclose between them an angle (.alpha.) of between 15.degree. and 60.degree., preferably 30.degree., and merge into one another by means of a circular arcuate frame part.

A process and apparatus for manufacturing waffle blocks filled with cream are disclosed. Individual waffle sheets are moved on a feeder belt into contact with a coating device for coating on one side and are introduced subsequently into a stacking device where they are individually lifted by at least two oppositely mounted upright spiral feeders that grip the waffle sheets and guide them upwardly in succession against each other until a waffle block composed of a predetermined number of waffle sheets is completed. The completed waffle blocks are pushed by the spiral tracks on a run-off belt and discharged.
