An apparatus for cooking food products is provided. The apparatus includes at least one heating plate having a surface provided with alternate crests and troughs. The apparatus further comprises a fixing system adapted to detachably fix a corrugated protective plate, having a non-stick face, to said heating plate. The corrugated protective plate has a first and a second corrugated edge and alternate crests and troughs extending from the first to the second corrugated edge and adapted to match the alternate crests and troughs of the heating plate when the corrugated protective plate is fixed to the heating plate. Said fixing system comprises fixing elements adapted to exert a force on corresponding portions of the protective plate close to the first or the second corrugated edge so as to push the protective plate against the heating plate.

Apparatus for cooking food products including a detachable plate

An apparatus for cooking food products on both sides which has a food-support surface that is transparent to both microwave and infrared radiation, an electric heating device, and a microwave generator. The microwave generator is connected to a waveguide cavity for irradiating the food products. The apparatus also has a food-contact heating surface that, together with the food-support surface, forms a cooking chamber capable of retaining the microwaves inside. The electric heating device has a shielded resistor with the external shield electrically connected to ground. The apparatus has a partition element made of thermal-insulating and microwave-transparent material, a portion of which is below the shielded resistor to separate the resistor from the microwave generator. The waveguide cavity has a microwave launch aperture underneath the partition element. The microwaves exit the cavity and pass through the partition element, the shielded resistor, and the food-support surface and radiate into the cooking chamber.

Method for chilling foodstuffs contained in a chilling compartment at controllable temperature, and adapted to perform according to an operating procedure that includes continuously pulling down a temperature inside the foodstuff to be chilled, until a pre-set value (T) is eventually reached, provided that the temperature inside the chilling compartment is lower than a pre-set value, and the temperature at the core of the foodstuff is lower than a pre-set value. In addition, before the process is allowed to move on to a final temperature pull-down step, further conditions are defined to ensure that the temperature pull-down pattern and rate inside the foodstuff are complying with the requirements set forth by applicable standards.

Deep-freezing apparatus for foodstuffs comprising a deep-freezing compartment, signal display means, sensor means adapted to detect the temperature inside the foodstuffs stored in said deep-freezing compartment, processing means for the signals generated by said sensor means, wherein the apparatus further comprises a neural network adapted to receive the signals issued by a temperature sensor situated inside the foodstuff being deep-frozen and by an information on the time elapsed from the beginning of the deep-freezing process, and further adapted to provide a signal representative of the residual time needed to reach a pre-set (deep-freezing) temperature, as well as processing means adapted to receive the signal output by said neural network and provide in response an information representative of the predicted time needed for a pre-determined temperature to be reached on said first temperature sensor.
