Also described is a process for making cereal grain kernels fortified with iron and calcium, the process comprising providing cereal grain kernels and mixing said kernels with a composition comprising an iron source and a calcium source.

A mineral fortified food matrix can comprise a dimetalhydroxy malate composition and a food matrix fortified with the dimetalhydroxy malate composition. Additionally, a method of administering a mineral in a bioavailable form to a warm-blooded animal can comprise steps of fortifying a food matrix with a dimetalhydroxy malate composition and orally administering the food matrix to a warm-blooded animal. In one embodiment, the mineral can be calcium and the method of administering calcium in a bioavailable form can comprise fortifying a food matrix with a dicalciumhydroxy malate composition.

The calcium amino acid malic acid chelate complex is prepared by reacting a calcium source, an amino acid ligand, and malic acid in an aqueous environment.

Calcium fortification of oleaginous foods

A cereal grain kernel coated with a metal amino acid chelate, a method for mineral or metal fortification of cereal grain kernels and a coating composition is disclosed. Unlike other metal or mineral fortificants, cereal grain kernels may be coated with iron, calcium, zinc and/or other metals in the form of an amino acid chelate without pulverizing individual kernels. Further, the coated kernels are stable, palatable and contain highly bioavailable metals.

A composition and method of making a processed cereal piece fortified with a metal amino acid chelate is disclosed and described. A processed cereal piece and one or more metal amino acid chelates may be combined by either 1) admixing the metal amino acid chelate(s) into the dough, flour or other precursor prior to toasting and/or otherwise cooking; and/or 2) coating the processed cereal piece with the metal amino acid chelate(s).
