Genetic markers associated with fatty acid content in meat products from animals, particularly Angus cattle, are described. The genetic markers are located in the thioesterase-encoding region of the fatty acid synthase gene. The markers allow animals to be characterized for breeding or for identification purposes to indicate animals likely to have a distribution of fatty acids that are healthier, thus generating improved meat products.

A method of improving the tenderness of meat and meat products is described. The method includes administering excessive doses of vitamin D to meat producing animals prior to slaughter. The vitamin D causes greater calcium activated calpain activity which degrades certain myofibrillar proteins in the meat postmortem. The resulting meat has a significantly lower shear force in comparison to untreated meat.

The use of glucagon as a metabolic conditioner for dairy cows and other ruminants is described. The glucagon is preferably administered in an amount of from 1-10 mg per day, preferably during the time period beginning 7 days before calving and continuing until 21 days after calving. The administration of glucagon decreases the incidence of metabolic diseases and metabolic imbalances associated with fatty liver, allows cows to reach peak mile production sooner, and results in increased feed intake during the early stages of lactation.

These organisms, once in the small intestine, will reduce free cholesterol to coprostanol, which is absorbed poorly. A method of genetically evaluating animals by using mitochondrial DNA is disclosed. Polymorphisms in mitochondrial DNA are detected by isolating, fragmenting, and sequencing the DNA. The restriction patterns and nucleotide sequences of mitochondrial DNA of different animals are correlated to expressed traits in the animals. This may be confirmed by comparing results to expression of the trait in maternal lineages of animals. Further, effects of maternal lineages are determined by partitioning maternal genetic variation from nuclear variation.

Eubacteria species A.T.C.C. 21408 is one such cholesterol reductase-containing bacterium. It is concentrated from a homogenate, preferably of leaves of plants or from bacteria or other organisms to provide a cell-free, cholesterol reductase-enriched preparation that can be used to decrease cholesterol content of food substances.
