A food timing system is disclosed that includes a number of timer modules associated with food holding devices in a restaurant. The timer modules are connected in a network for communicating information about the food being held in food holding compartments of the food holding devices. Each timer module includes a plurality of timers, with each timer being associated with a food holding compartment of a food holding device. The timers measure the holding time of food in each food holding compartment and are capable of transferring the holding time to another timer when the food is transferred to a holding compartment associated with the other timer.

Food product timing system

A smart tray system includes a plurality of information tags and a plurality of communication devices, which can communicate with each of the information tags when the information tags are located in the proximity of the communication devices. Each information tag is attached to a food tray and contains information about the food tray and the food product contained therein. The information tags and the communication devices provide for tracking and updating the information about the food product contained in the food trays.

Smart tray system and method for restaurant inventory management

A system is provided for manually manipulating a food pan in a food warming apparatus having an open front end communicating with an interior warming compartment. A wire form pan holder cradles the food pan and moves the pan into and out of the warming compartment through the open end of the warming apparatus. A wire form grate is provided in the warming compartment for guiding the pan holder into and out of the compartment. The pan holder has a handle projecting forwardly thereof. First complementary interengaging stops between the wire form grate and the wire form pan holder define an inner position of the pan holder. Second complementary interengaging stops between the grate and the pan holder define an outer position of the pan holder.

Food pan management system in food warming apparatus

A cooking apparatus disclosed herein includes a vat storing cooking medium for cooking food items placed therein, a heater for heating the cooking medium, and a temperature sensor for sensing cooking medium temperature. A cooking control comprises an interface circuit connected to the heater and the temperature sensor. A programmed processor is connected to the interface circuit for controlling the heater during a cooking cycle in response to sensed temperature in accordance with a programmed algorithm. The algorithm uses a preselected cooking energy profile for a typical batch of a food product to be cooked during the cooking cycle. The profile identifies predetermined times during the cooking cycle at which the heater is turned on or off. The algorithm periodically compares sensed oil temperature to the stored profile and in response to deviations from the stored profile dynamically modifies the cooking energy profile for use during the remainder of the cooking cycle.
