The invention relates to an enzymatic acylation method including at least the following steps of: contacting at least one compound having at least one function selected from among the amine, alcohol, or thiol functions, at least one microorganism having an acyl transfer activity and/or an acyl transfer enzyme, and at least one acylphosphonate donor of formula (I), where: R is an alkyl, alkene, alkyne, aryl, or aralkyl radical, or is &#x2014;ORa, &#x2014;SRa, &#x2014;NRaRb, where Ra and Rb are identical or different and are H, an alkyl, alkene, alkyne, aryl or aralkyl radical, the alkyl, alkene, alkyne, aryl or aralkyl radicals being optionally substituted; X is O or S; Y and Z, which are identical or different, are &#x2014;OR1, &#x2014;OR2, &#x2014;SR1, &#x2014;SR2, &#x2014;NR'1R&#x2033;1, &#x2014;NR&#x2032;2R&#x2033;2; R1, R2, R&#x2032;1, R&#x2032;2, R&#x2033;1 and R&#x2033;2, which are identical or different, are an alkyl, alkene, alkyne, aryl or aralkyl radical, said alkyl, alkene, alkyne, aryl or aralkyl radicals being optionally substituted; and recovering the compound including at least one acyl function, said function being selected from among the amine, alcohol, or thiol functions.

This invention has as its object a method for releasing a product by subjecting a compound of Formula (II'): R&#x2032;R&#x2032;(HX)C-C(YH)R&#x2032;R&#x2032;to a chemical oxidation that cleaves the bond C-Cto obtain the product. In the compound of Formula (II&#x2032;): R&#x2032;to R&#x2032;, which are identical or different, correspond to a hydrogen atom, a substituted or unsubstituted alkyl group, or a substituted or unsubstituted functional group; X and Y, which are identical or different, are an oxygen atom, a sulfur atom, or an amine of Formula &#x2014;NRR, wherein Ris a hydrogen atom, an alkyl group, or a substituted or unsubstituted aryl group, and Ris not a hydrogen atom. The released product can be a volatile molecule or an active substance or else a specific product. The invention also relates to a method for detecting the released product as well as its applications, in particular for detecting catalytic or enzymatic activities.

This invention has as its object a process for generating the idiosyncratic catalytic imprint of a sample, characterized in that it comprises the following stages: the sample that is likely to have the catalytic activity is brought into contact with a group of substrates; the signals that are generated after said contact are captured in some way. Advantageously, after the signals are captured, a processing of the latter that consists of assigning to each signal a digital value constituting a component of a graphic display, for example a color display, of the idiosyncratic imprint is carried out.

This invention has as its object a method for detecting catalytic activity of a sample, characterized in that it comprises: the incubation of a substrate (S) with the sample that may have the catalytic activity that it is desired to detect, the addition of a reagent (X) that can react either with a chemical group of unconsumed substrate (S) or with a chemical group of product (P) that is formed after an incubation period with the sample, the addition of a developer (R) that can react with reagent (X), and the detection of the transformation of developer (R).
