The present invention relates to oral compositions containing cranberries or parts of cranberries, such as cranberry extract, or a mixture of such materials and other antibacterial/antimicrobial agents. The invention also relates to methods of treating plaque/gingivitis and other periodontal diseases as well as dental calculus and caries.

Beverage compositions having enhanced .beta.-carotene bioavailability

A metastable complex of calcium, citrate and malate is disclosed. This material is highly bioavailable, and is soluble in both neutral and acid solutions. The salt is prepared by the reaction of calcium carbonate, calcium hydroxide or calcium oxide with citric and malic acids in aqueous solution. The reaction mixture is dried at a temperature of less than 100.degree. C., and the resultant solid is a metastable solid. The solid can be ground to reduce the particle size for easier tabletting or adding to foods and beverages. Preferred salts are neutral and acidic salts which can be expressed by molar ratios.

Calcium citrate malate composition

Vitamin and mineral-fortified beverages, especially carbonated beverages are disclosed. These beverages are stable and contain vitamin A in the form of encapsulated .beta.-carotene, vitamin C and riboflavin. The beverages show enhanced calcium and iron absorption.

Stable nutritional vitamin and mineral supplemented beverage

A beverage containing a flavorant and green tea solids or flavanols is disclosed. The beverage can contain sweeteners. Caffeine can also be present in the beverage in ratio of caffeine to flavanols of from about 1:1 to about 1:30. The beverage can be carbonated or non-carbonated, i.e. a still beverage such as fruit juice or coffee. The preferred green tea solids are catechin and epicatechin and their derivatives. When caffeine is present, this beverage retains the alertness benefit of caffeine along with the relaxing effects attributed to the green tea solids.

The method for preparing these beverages and concentrates involves forming a premix solution containing highly soluble calcium citrate and malate species which is then combined with concentrated fruit juice, plus other fruit juice materials. This method provides beverages and concentrates which contain substantial levels of solubilized calcium without generating cooked/browned off-flavors and without including undesirable species such as chloride ions.

Method of preparing fruit juice beverages and juice concentrates

Nutritional mineral supplements comprise a mixture of a calcium source, especially calcium citrate-malate, and an iron-sugar complex, especially iron sucrate-malate. Food and beverage compositions, especially juice beverages, supplemented with these calcium and iron materials are disclosed.

Calcium-iron mineral supplements

Beverages and beverage concentrates nutritionally supplemented with significant levels of solubilized calcium are disclosed. The beverages and concentrates are substantially free of a sugar alcohol and contain specified levels of total edible acids selected from mixtures of citric, malic and phosphoric acid. The weight ratio of total acids to calcium, as well as the particlar acid mixtures, are selected to provide beverages and concentrates having good stability against precipitation of insoluble calcium salts, satisfactory initial taste/mouthfeel, substantial freedom from objectionable aftertaste and desirable calcium absorbability/bioavailability properties.

Fruit juice beverages and juice concentrates nutritionally supplemented with significant levels of solubilized calcium are disclosed. These beverages and concentrates are substantially free of added protein, and comprise at least about 45% fruit juice. The method for preparing these beverages and concentrates involves forming a premix solution containing highly soluble calcium citrate and malate species which is then combined with concentrated fruit juice, plus other fruit juice materials. This method provides beverages and concentrates which contain substantial levels of solubilized calcium without generating cooked/browned off-flavors and without including undesirable species such as chloride ions.

Fruit juice beverages and juice concentrates nutritionally supplemented

Beverages especially suitable for carbonated soft drinks having a pH of from about 2.5 to about 6.5 are disclosed herein. These beverages have a flavor component which contains flavors selected from fruit flavors, botanical flavors and mixtures thereof. These beverages also contain mixtures of calcium and potassium cations, and preferably mixtures of calcium, magnesium and potassium cations, defined by a regression formula. Also included are edible acids selected from citric, malic/succinic and phosphoric acid, and mixtures thereof defined by a second regression formula. These beverages provide desirable flavor impressions in terms of sweetness, body and sourness with minimal bitter or salty off-notes. In addition, concentrates and syrups used to form these beverages have surprising stability against precipitation of insoluble salts.
