An automated food processing system and method are provided that allow food to be dispensed, fried and packaged in a suitable container, which may be an individual portion-sized container. In one embodiment, the system includes separate automated modules for dispensing, frying and packaging the food. In one embodiment, an automated dispensing device dispenses a predetermined portion of food from a bulk storage container or food dispensing magazine to an automated fry device that can include at least one circular fry wheel having a plurality of food containing compartments. After the food is fried it is dispensed from the fry device to an automated packaging device. The automated packaging device dispenses food to a container that may be an individual portion-sized container that is retrieved, erected and held into position for filling by an automated container handling system. A conveyor system transports the filled container to a suitable pick-up location.

Automated food processing system and method

An automated food processing system is provided that allows food to be dispensed, fried and packaged in a container, for example, an individual portion-sized container. Automated food frying device and method

An automated method of packaging cooked French fries in an individual portion-sized French fry container is provided, wherein the cooked French fries are mechanically delivered to a holding bin, an empty French fry container is mechanically scooped into the cooked French fries to fill the container, and the filled French fry container is mechanically deposited at a drop-off location. The cooked French fries may be received on an inlet chute, the inlet chute optionally vibrated to assist gravity in causing the French fries to travel into the holding bin. Seasoning may be applied to the French fries while the French fries are on the inlet chute, optionally restrained by one or more gates. After filling, the filled container may be mechanically shaken. Additionally, the empty French fry containers may be mechanically selected from a plurality of different-sized collapsed containers, mechanically obtained, and mechanically erected prior to scooping.

Automated method of packaging food items

A device and method are provided for dispensing a quantity of food to be cooked. The device includes a freezer, a storage container located in the freezer, means located in the freezer for dispensing a predetermined quantity of food from the storage container into a secondary container, and means for dispensing the quantity of food from the secondary container to a location outside the freezer. The means for dispensing a predetermined quantity of food may be, for example, a magazine with dual spiral flights for dispensing food items one at a time, or a vibratory conveyor cooperating with a device for determining a quantity of food in the secondary conveyor and means for terminating the dispensing when a predetermined quantity of food is sensed. The secondary container may have an opening in its bottom and be movable laterally to align its opening with an opening in the freezer.

A device is provided for determining the number of food pieces in the container located in the secondary container and for dumping the secondary container so that food pieces contained in the secondary container are dumped to a location outside of the freezer.

A food treatment cabinet having a frame/housing defining a food treatment space. First structure is provided for at least one of heating, cooling, and adding moisture to air within the food treatment space. The frame/housing has a first wall with a first opening therethrough to selectively permit introduction of food into the food treatment space and withdrawal of food from the food treatment space. A first fin projects away from the first wall above at least part of the first opening to inhibit heat transfer between the food treatment space and the atmosphere externally of the food treatment space.

Food treatment cabinet

A food conditioning chest has a generally rectangular tub supported in the housing to define an upwardly opening food well for supporting foodstuffs. Louvered openings are formed in opposite end walls and the front wall and the rear wall of the tub. A return duct communicates with the food well through the openings formed in the end walls and transports return air to an intake chamber formed beneath the tub floor. An intake duct extends from the intake chamber and communicates with the food well through the openings formed in the front wall and the rear wall. A centrifugal fan positioned in the intake chamber circulates air from the return duct and the intake duct. As the air flows through the intake chamber, it passes over at least one heating element which heats the air to a desired temperature.

Food conditioning chest

A liquid control assembly consisting of: a housing having a top and bottom, a chamber, a drain conduit having an entryway in the chamber and communicating between the chamber and a discharge point, and a delivery conduit having an entryway in the chamber and communicating between the chamber and a point of use; and structure for selectively blocking the drain conduit entryway and for thereby diverting liquid in the chamber to the delivery conduit.

Liquid control assembly

A microprocessor controlled food treatment/holding apparatus has a cabinet which defines a storage space for food to be treated at a predetermined temperature and relative humidity within said storage space, a heater with a surface that can be heated to a temperature which is sufficient to boil water for a predetermined length of time, and a controlled solenoid for delivering a plurality of preselected amounts of water against the heater surface according to the length of time a cabinet door is opened. Detailed operating parameters for the storage space of the temperature and relative humidity conditions are maintained in suitable memory and polled by the microprocessor during operation of the apparatus as real-time data from remote sensors are sent to the microprocessor, which controls the monitoring system of the apparatus. Separate and independent control logic exist for an initial pre-heat mode of operation, as well as for a normal operating mode of the apparatus for the cabinet door being opened and for the cabinet door being unopened for an extended period of time. Also disclosed is a method for controlling the temperature and relative humidity of a storage spaced within a cabinet apparatus used for treating and holding prepared food prior to serving.
