The invention concerns new products of the general formula (I): ##STR1## in which R represents an alkyl radical containing from 1 to 4 carbon atoms and R.sub.1 is selected from the group comprising a hydrogen atom, and alkyl radicals containing from 1 to 4 carbon atoms, in their racemic and optically active forms, as well as the alkaline, alkaline-earth and amine salts, products having the general formula (I) in which R.sub.1 represents a hydrogen atom, said products being capable of releasing glyoxal and products of the formula OHC--COOR.sub.1 in which R.sub.1 represents hydrogen or a C.sub.1 -C.sub.4 alkyl radical.
