The substrate specificity of a lipolytic enzyme can be modified by making alterations to the amino acid sequence in a defined region of the lipolytic enzyme, so as to increase the level of a desired activity or to decrease the level of an undesired activity. Thus, the inventors have developed lipolytic enzyme variants with a modified amino acid sequence with a substrate specificity which can be tailored for specific uses.

Lipolytic enzyme variants

The present invention relates to variants (mutants) of parent Termamyl-like alpha-amylases, which variant has alpha-amylase activity and exhibits altered stability, in particular at high temperatures and/or at low pH relative, and/or low Cato the parent alpha-amylase.

Alpha-amylase mutants with altered properties

The invention relates to isolated CGTases and isolated nucleic acid sequences encoding the CGTases. The invention also relates to nucleic acid constructs, vectors, and host cells comprising the nucleic acid sequences as well as methods for producing and using the CGTases, in particular to cleaning and detergent composition comprising such CGTases.

CGTase and DNA sequence encoding same

The present invention relates to isolated polypeptides having phytase activity, the corresponding cloned DNA sequences, a process for preparing such polypeptides, and the use thereof for a number of industrial applications. In particular, the invention relates to phytases derived from the phyllum Basidiomycota, phytases of certain consensus sequences and fungal 6-phytases.

Phytase polypeptides

The present invention relates to phytase variants derived from a parent phytase which is homologous to aphytase and comprises at least one substitution in at least one of a number of positions corresponding to a position in thephytase. The variants are of improved properties, in particular of a higher specific activity and/or more thermostable than the parent phytase, e.g. of a Tm of up to 82&#xb0; C. at pH 5.5, as determined by DSC, and/or of a doubled specific activity. Disclosed is a process for preparing a dough or a baked product from the dough which process involves incorporating into the dough an anti-staling amylase and a phospholipase. The bread made by the combined use of an anti-staling amylase and a phospholipase has improved softness, both when eaten on the same day and when stored for several days after baking. There is no significant change in the taste or smell of the baked product.
