Disclosed herein is an isolated05B0111 capable of producing an exopolysaccharide. The05B0111 is deposited in Biosource Collection and Research Center (BCRC) of Food Industry Research and Development Institute (FIRDI) under an accession number BCRC 910420 and deposited in Deutsche Sammlung von Mikroorganismen and Zellkulturen GmbH (DSMZ) under an accession number DSM 22345. A method of producing an exopolysaccharide is also disclosed. The method involves cultivating an isolatedin a suitable medium under condition such that the exopolysaccharide is formed. A pharmaceutical composition including the aforementioned05B0111 and a food product including the aforementioned05B0111 are disclosed as well.

A technique for producing microbial cellulose is provided, including: preparing a liquid medium for microbial cultivation in a container; horizontally rotating multiple hollow tubes that are fitted together or separated from one another, so that each of the hollow tubes is alternately partially immersed in the liquid medium and partially exposed above the horizontal surface of the liquid medium; wherein each of the hollow tubes has a rough outer surface and a smooth inner surface, so as to allow microorganisms to form microbial cellulose on the outer surface of each hollow tube, as well as forming sheets of microbial cellulose on the horizontal surface of the liquid medium not being disturbed by the hollow tubes, and removing the microbial cellulose from the outer surfaces of the hollow tubes in order to obtain tubular microbial cellulose. In addition, the sheets of microbial cellulose are also harvested from the liquid medium.

These strains can be isolated from healthy infant feces as the parent strains. Further, an isolated Bifidobacterium mutant strain which grows aerobically, is ten times more tolerant to hydrochloric acid at a pH of 1.5 to 4.5 and is also tolerant to oxgall at 0.3% in a culture medium is disclosed. The strains show excellent growth under aerobic condition in the presence of skim milk without supplement of other growth promoting substances. The oxygen-tolerant property of the strains makes them useful for industrial production. In addition, food products containing the strains are also disclosed.

The present invention relates to bidifobacteria strains having tolerance in the gastrointestinal environments and to a method for culturing the same. The strains of the invention are Bifidobacterium longum (ATCC 55815, 55816, 55817, 55818) which have tolerances against bile salt, acid and oxygen and which have been obtained through mutagenesis and screening for tolerances against bile salt, acid and oxygen by using acid-tolerant Bifidobacterium longum Y1 and Y2 strains (ATCC 55813 and 55814) isolated from healthy infant feces as the parent strains. The strains of the present invention show excellent growth under aerobic condition in the presence of skim milk without supplement of other growth promoting substances. The present invention provides a process for L-phenylalanine fermentation by coryneform bacterium. The present invention successfully applies an oxystat to control the timing of feeding of molasses so as to maintain low dissolved oxygen tension and low substrate concentrations during the course of fermentation. The oxystat improves fermentation productivity appreciably. Furthermore, the present invention discovers that the proper increases of the oxygen supply rate to the culture decreases product feedback inhibition of phenylalanine formation as phenylalanine concentration increases.
