Bicyclic aldehydes of formula ##STR1## possess useful organoleptic properties and can be used advantageously as perfume and flavor ingredients. Compounds (I) develop woody and ambery odor notes and woody, musky and earthy gustative characteristics. They are prepared by a multistep process starting from (E)-13-norcaryophyll-4-en-8-one.
