A system and method for reducing or preventing bacterial contamination in food includes application of a bacteriophage treatment to any type of food product at any stage of processing the food product. The bacteriophage treatment may also be applied to non-food surfaces and water systems, which may be susceptible to bacterial contamination and subsequent spread of bacteria. The bacteriophage treatment comprises at least one bacteriophage in a concentration sufficient to reduce or prevent bacterial contamination from pathogenic bacteria and/or spoilage bacteria. In some embodiments, the bacteriophage is able to reduce or eliminate bacteria introduced to a food product after the bacteriophage treatment was applied to the food product. In some embodiments, the bacteriophage treatment includes a buffering agent to maintain the bacteriophage at a pH level that sustains the bacteriophage. In some embodiments, the bacteriophage treatment includes a surfactant and/or a thickener to aid in applying the bacteriophage. Additional adjuvants and enhancers may be used in some embodiments to stabilize the bacteriophage or enhance its performance as an antibacterial agent.

Bacteriophage treatment for reducing and preventing bacterial contamination

Described is a method of sanitizing animal carcasses using aqueous streams having an antimicrobial composition added to the stream. Preferably, the antimicrobial composition includes a mixture of one or more carboxylic acids having up to 18 carbon atoms and one or more peroxycarboxylic acids having up to 12 carbon atoms, preferably a mixture of a C-Cperoxycarboxylic acid and a C-Cperoxycarboxylic acid. Also described is a novel antimicrobial composition adapted for sanitizing animal carcasses containing a mixture of one or more C-Cperoxycarboxylic acids and one or more C-Cperoxycarboxylic acids and an alpha-hydroxy mono- or dicarboxylic acid.

Treatment of animal carcasses

Described is a method of sanitizing animal carcasses using aqueous streams having an antimicrobial composition added to the stream. The present invention relates to a composition including a microbial component and a foaming component, wherein the composition can be used to prevent the proliferation, or otherwise competitively exclude the continued growth of, undesirable microbes. The present invention also includes a method of using this composition.

Foaming composition of competitive exclusion microbes and methods of using same

A method for cleaning polyethylene terephthalate containers including contacting the PET container with an alkaline wash solution having a temperature ranging of less than about 60&deg; C. is disclosed. The alkaline wash solution is formulated from a first concentrate, a second concentrate, an alkalinity source, and a balance of water. The first concentrate preferably has a first nonionic surfactant, a first builder, and acid in an amount effective to provide a phase stable solution. The second concentrate preferably has a second nonionic surfactant and a second builder. The first and second concentrate are present in the wash solution in a concentration ranging from about 0.3 wt. % to 2.0 wt. %. Preferably, the first nonionic surfactant has a cloud point ranging from about 5&deg; C. to 60&deg; C.

Cleaning method for polyethylene terephthalate containers

An antimicrobial and antiviral composition in powder form or in the form of a two part liquid concentrate for washing and sanitizing foods, food surfaces, food ware, process waters, animal quarters, and animal carcasses is described. The composition may also be used to reduce the microbial and viral population on animals; reducing human pathogenic microbes, reducing opportunistic pathogenic microbes on eggs, and treating skin diseases. The composition includes three reactive species which in solution form an oxidizing species, and optionally a food grade acid source. The reactive species include a natural source of a quaternary or protonizable nitrogen compound which is acceptable on foods, an oxidant and a halide source.

Antimicrobial and antiviral compositions and treatments for food surfaces

A peroxyacid antimicrobial concentrate and use composition is provided comprising a C,to C,peroxycarboxylic acid or a C,to C,peroxycarboxylic acid combined with a C,to C,peroxyacid in beverage processing. The combination of these materials produces a synergistic effect, providing a much more potent biocide than can be obtained by using these components separately. Other components can be added to the composition such as hydrotrope coupling agents, stabilizers, etc. An effective antimicrobial use solution is formed at low concentrations when the concentrate composition is diluted with water to a pH in the range of about 2 to 8. Sanitizing of substantially fixed, &ldquo;in-place&rdquo; processing lines in dairies, breweries, and other food and beverage processing operations is one utility of the composition. Another utility is in processes including aseptic cold filling of beverage containers such as cans, glass bottles or two liter PET bottles.

Both a process and a method of using peracid compositions, especially mixed peracid systems, to treat field or greenhouse grown plant tissue, seeds, fruits, and growing media and containers. The peracid can lower the natural, plant pathogen and human pathogenic microbial load resulting in less waste to molding, spoilage, and destruction because of pathogenic poisons.
