The present invention relates generally to polysaccharide synthases. More particularly, the present invention relates to (1,3;1,4)-&#x3b2;--glucan synthases. The present invention provides, among other things, methods for influencing the level of (1,3;1,4)-&#x3b2;--glucan produced by a cell and nucleic acid and amino acid sequences which encode (1,3;1,4)-&#x3b2;--glucan synthases.

The present invention relates generally to polysaccharide synthases. More particularly, the present invention relates to (1,3;1,4)-&#x3b2;-D-glucan synthases. The present invention provides, among other things, methods for influencing the level of (1,3;1,4)-&#x3b2;-D-glucan produced by a cell and nucleic acid and amino acid sequences which encode (1,3;1,4)-&#x3b2;-D-glucan synthases.

The present invention provides a finings formulation comprising pectin and methods of using pectin in a fining process to produce fined beverages, particularly beers.

Polysaccharide synthases (H)

Certain cultured plant cell gums, including those produced in suspension culture of plant cells of plants of the family Aizoaceae are described. Plant cell gums of plants of the genus Mesembryanthemum are specifically provided. Also described are the methods of using these cultured plant cell gums in the manufacture of food products, pharmaceuticals and veterinary products, cosmetics and other industrial products, such as paper, adhesive, ink, textiles, paint, ceramics, explosives, cleaning agents or detergents, products for firefighting, agricultural chemicals including pesticides and fungicides, for oil and gas production, and in photography, lithography, and other industries are described. Food, pharmaceutical, veterinary, industrial and cosmetic compositions containing certain cultured plant cell gums are also described. Plant cell gums can be employed as substitutes for plant exudate and extract gums and other known emulsifying, viscosifying and gelling agents.

Cultured plant cell gums for food, pharmaceutical, cosmetic and industrial applications

This invention provides plant arabinogalactan proteins (AGPs) and their genes. AGPs were isolated from Nicotiana alata, Nicotiana plumbaginafolia, and Pyrus communis. Amino acid sequences of isolated AGP peptide fragments are presented. Isolated AGP fragments were used to synthesize oligonucleotide probes to prepare oligonucleotide primers for PCR or prepare RNA probes to screen cDNA libraries of N. alata, N. plumbaginafolia, and P. communis. cDNA clones encoding amino acid sequences of isolated AGP fragments were isolated. The invention presents for the first time an intact AGP amino acid sequence derived from a corresponding AGP gene. The instant invention further provides methods useful in obtaining AGP genes encoding an AGP peptide comprising a specific isolated hydroxyproline-rich (OAST-rich) sequence or a specific isolated hydroxyproline-poor sequence.

Methods of using cultured plant cell gums in the paper, adhesive, oil and gas, ink, lithography, textile, paint, ceramics, cleaning detergent, cosmetics, photography, explosive, firefighting, agricultural, and other industries are described. Industrial and cosmetic compositions containing cultured plant cell gums are also described.

Industrial pharmaceutical and cosmetics applications for cultured plant

A method for the culturing of gum-secreting plant cells, recovery of the gum from the medium and use of the plant gum in food products is described. In particular, the plant gum product of cultured Pyrus, Prunus avium and Rosa cells can be used in food products as comprising complex carbohydrates and glycoproteins, for example, an emulsifying agent, an emulsion stabilizer, a thickening agent or a texture modifier.
