Improved encapsulated products comprising a matrix of a starch hydrolyzate acid ester having a water-insoluble material encapsulated therein. In preferred embodiments, a reducing sugar is employed in the encapsulating process and the starch hydrolyzate ester is refined and an acid in combination with an acid salt is used in forming the starch hydrolyzate acid ester.

Starch hydrolyzates having a dextrose equivalent value of not more than about 25 which contain up to about 20% glucose by weight and up to about 40% maltose by weight, with the combination of glucose and maltose not exceeding about 40% by weight of the composition.

Low D.E. starch hydrolyzates which can be readily filtered are obtained from non-waxy starches by treatment with bacterial alpha-amylase for an extended period at a temperature above about 95.degree. C.

There is disclosed dried emulsion concentrates obtained by dehydrating oil-in-water emulsions containing a non-gelling starch hydrolyzate having a D.E. value of about 4 and not more than 25. The dried concentrates upon dispersing in water undergo inversion to form edible water-in-oil spreads of 15 to 35% fat by weight having the consistency of natural butter at room temperature.

Margarine or butter-like spreads of reduced caloric values which involve an edible fat at levels of from about 15 to 35% by weight of the spread and a low D.E. non-gelling starch hydrolyzate having a D.E. value of about 4 and not more than 25.

Gluten is heat treated at a relatively high temperature for a short period and then is extracted with an organic solvent to improve filterability and purity. Mixtures of the purified gluten and other protein materials have high nutritional value.

Vegetable protein source materials are dispersed in water at a pH in the range of 2 to 6 and an acid phytase is included therein. The acidic extract containing soluble protein is separated and dried to yield a solid protein of desirable character. A protease can also be used to improve the characteristics of the protein.
