Disclosed herein is an immobilized enzyme inulin-D-fructotransferase carried in a specific anionic exchange resin with pores having a mode radius in the range of 75 to 2,000 angstroms. The immobilized enzyme of the present invention is effective in the production of DFA III from inulin.

There is disclosed a process for the renewal of a deactivated insolubilized glucose isomerase which comprises subjecting an insolubilized glucose isomerase adsorbed onto an anion exchange resin, which has been used for isomerization of glucose into fructose to decrease its activity, to treatments by an aqueous mineral acid solution in combination with an aqueous alkaline solution, an aqueous electrolytic salt solution, an aqueous mineral acid or a mixture thereof to release adsorbed materials from the resin which is converted into a salt type and adsorbing fresh glucose isomerase to the regenerated resin to recover the activity of the insolubilized glucose isomerase.

Process for the renewal of an insolubilized glucose isomerase

A method for preservation of an aqueous glucose isomerase solution is disclosed in which an aqueous glucose isomerase solution is mixed with a an alkaline material to adjust its pH value within a range of from 9 to 12 whereby the aqueous solution can be stored at room temperature for a period not less than three days without microbial contamination, putrefaction, denaturation and deactivation of the glucose isomerase.

There is disclosed a process for producing an insolubilized glucose isomerase useful for converting glucose into fructose comprising contacting a macroporous anion exchange resin with glucose isomerase to effect absorption of the isomerase on the resin, said resin having high porosity and high ion exchange capacity, whereby the resulted insolubilized glucose isomerase has high degree of adsorption, high activity retention and high activity yield.
